Inspired by Sicilian pignoli cookies
Pignoli cookies are macaroons of Sicilian origin made with almond paste and pine nuts during the big holidays like Christmas.
An almond cookie, the recipe of which I am about to share with you, is a little pretty sister of that gorgeous Sicilian Christmas treat. It is so easy and fast to make that you will feel almost guilty for an amazing and delicious result you get.
Imagine you invite the guests over for a dinner. You take a pride in making an entire meal from scratch and, at some point, you realize the prep time is up, guests are at the doorstep, and no dessert has been made. Here is a solution. Almond cookies! 3 main ingredients plus 2 extra for an enhanced flavor and decoration. 5 minutes to put things together, 10 minutes in the oven. The result is worth any fancy dinner.
Recipe makes 15 cookies
Ingredients
Almond flour - 1 1/2 cups Sugar - 1 cup Egg whites - 2 Almond extract - 1 teaspoon Nuts, whole/halves - for decoration
Instructions
- Preheat the oven to 360 F.
- Beat egg whites with an electric mixer until foamy, for 30 or so seconds.
- Add sugar and beat for another half a minute.
- Add almond flour and mix well. You can make your own almond meal by processing almonds, either skinned or not, in a food processor.
- Mix in an almond extract.
- Using a spoon, drop a half of a tablespoon of cookie dough at a time on the baking sheet lined with the parchment paper. Place the cookies at a distance. They will flatten and double in size as they bake.
- Put 1 or a few raw nuts of your choice on each cookie and slightly deep them in.
- Bake until the bottoms of the cookies get golden brown (10-12 minutes).
- Take the cookies out and place them on a wire cooling rack using a spatula.
- Cookies are ready.
